Imperial Treasure La Mian Xiao Long Bao. Most patrons at this Shanghainese, less oil, less salt mainstay of healthy Chinese cooking in the region are often too busy noodling their Sunday afternoons away to realize the keel that makes up their food. Each satisfying bowl of la mian is made fresh to order, with flour steeped in native enigma sealed in with vegetable oil and water.
 

Of the 17 noodle variations — dry, fried or in soup — the la mian soup with beef and chilli oil and the la mian char chiang (noodles with minced chicken) — are certified bestsellers. But I recommend the vegetarian la mian, which, topped with delicate slivers of cucumber and chives and hinting of sesame, is as autochthonous and sweet as you can dare imagine. Have it with marinated bamboo shoots, another winner in the simple and pristine department. What more, the no-egg policy ensures easy digestion and the chef’s floor show is always entertaining.

Other delights include deep fried soft shell crab with golden garlic, wu xi style crispy eel, and stir fried prawns with chilli sauce. The austere steamed soon hock spiked with fresh cut chillies is another winner.
